I've been looking for a good recipe for fluffy gluten-free pancakes for sooo long. And finally, I've modified a few recipes and here we are! So fluffy, soft, nutritional best pancakes ever!
Those ones are gluten-free, naturally sweetened and of course vegan (without eggs, cow milk and any unnecessary things).
Sunday breakfast morning will never be the same. This recipe will change it! Add your favourite fruits, make some coffe and sit down in Sunday morning with your family, share together and enjoy!
INGREDIENS (about 14 mid pancakes)
1 cup oat flour (made your own one from whole oats if you don't want to buy)
3/4 cup of potato starch
3/4 cup of rice flour (or any different gluten-free flour)
1 tbsp of baking powder
1 tsp of salt
1 medium ripped banana
1 1/2 tbsp of coconut oil
1 tbsp of maple syrup (or agava syrup, or any sweetener of your choice)
1 3/4 plant based milk (i used coconut milk)
FOR TOPPING
agava syrup
bananas
home-baked granola
HOW TO MAKE
Just mix everything together in one bowl with a blender. The batter should be smooth and pourable. I used non-sticked pan, if you don't have one, just use a coconut oil to not burn your pancakes.
Top them with favourite fruits, peanut butter, maple syrup, homemade granola or any different toppings of your choice! Enjoy!
